Less Alco
CO2 Winery transformsfermentative CO2 from vats into a valuable resource for winemakers.
Thanks to our CO2 Box, we analyze, purify, and compress this gas, which is then stored safely in storage racks, ready for reuse. This approach is part of a circular economy approach, enabling us to reduce CO2 losses and transform this waste into a asset for the winery.
One of the valorization processes we offer is dealcoholization using CO2.

We are developing a technology for reinjecting fermentative CO2 during winemaking to reduce the alcohol content of wines by 0.5 to 2 degrees.
This process, patented in 2021, is the fruit of in-depth research andconclusive initial tests carried out in 2022. In partnership with the ISVV, tests were also carried out under real conditions in 2023.
We're now looking to extend this experimentation with ambassador customers to take part in tests during the next harvest. These partners will play a key role in the evolution of this process.
What are the advantages of partial dealcoholization of wines?
- Facilitation of fermentations : Particularly beneficial for musts very rich in sugar due to current climatic changes, this process helps regulate alcoholic fermentations.
- Mouth balance: By reducing alcohol content, it attenuates the burning character of certain wines, creating a more harmonious taste balance.
- Responding to consumer trends: The growing demand for lower-alcohol, lighter wines makes this technology a modern solution tailored to today's expectations.
This innovative process for reinjecting fermentative CO2 offers a sustainable solution to help winemakers produce more balanced wines, in line with changing consumer tastes.
