Recycling: when fermentative CO₂ becomes dry ice

"It's possible to use CO2 from fermentations to produce your own dry ice. The Vignerons de Tutiac, in Gironde, are proving it. What remains to be done, however, is to fine-tune the financial equilibrium of such recycling.

"Nothing is lost, nothing is created, everything is transformed. "The famous maxim attributed to Lavoisier was confirmed on Thursday September 26 at the Tutiac winery in Marcillac, which is testing equipment designed to produce its own dry ice using CO2 from its fermentations... "
