6 recent solutions with CO2 Winery
The young Bordeaux company COz Winery, co-created at the end of 2022 by Jean Philipe Ricard, a former Alcion Environnement employee, offers several solutions for CO2 capture and recovery.
- A COz capture network above the tanks (solution called COzNetwork). It incorporates PVC or stainless steel pipes, with a valve and safety relief valve. COz is collected at 90%, then compressed to 6 bars and collected in a tank.
- A solution for reusing COz for tank pumping-over and optimizing extractions, as an alternative to traditional pumping-over and punching-down. The CO2 is reinjected under the marc cap (CO2 Vinif process).
- The ValecarB bicarbonate recovery process (presented on page 50).
And more innovative solutions:
A system for re-injecting CO2 into the cellar water to saturate it and acidify it (CO2Water system), increasing its washing efficiency and saving over 50 % of water, especially after descaling with soda.
- A system patented in 2021 for reusing fermentative CO2 to reduce the alcohol content of wines by 0.5 to 2 % during fermentation. Called LessAlco, the process was tested in 2022. It consists in eliminating the ethanol volatilized with the CO2.
- A CO2 compression solution (CompCO2) for storage, either for reuse in the winery: inerting, dry ice, gas pressure, etc., or for external use by transport in tanks.
At Château Latour in Pauillac, the captured CO2 is compressed for storage in bottles, either at 60 bar or 200 bar, depending on its intended use: at 60 bar, for reuse during winemaking (extraction, pumping-over, etc.) and at 200 bar to produce dry ice for inerting.
